Using automation more and more, I'm constantly having to use the menu (each time) to set Mode/Color

I tend to set all my lanes to the same color since there's really no benefit to using multiple colors. What I mean is, if multiple lanes (for a given track) could be seen at once, it would make more sense to distinguish by color. Since only a single lane can be seen though, there's really nothing to distinguish so the coloring is kinda moot. For this reason, I just use the same color over and over again because it looks good.
It would be nice if I could just define this known preference somewhere since it would eliminate a frequent step in the overall work flow.

meaning the last selected used color is saved and possibly making the new default?

I don't agree with you.
Imagine the following scenario.
I want to automate a track with violins and another with piano at the same time. On violins I automate the "pan" and on piano the "volume".
If I always use "pans:green", "volume:red" (for example), I can see at a glance what I'm automating on each track.
Of course this doesn't affect the new functionality.
I just wanted you to see the usefulness of being able to have different colors.

Right, the feature wouldn't be of any use to you. That said, just realize the only reason you're benefiting from the separation of colors is due to the exact scenario where you are distinguishing between 1 lane across 2 (multiple) tracks. As soon as you go to automate anything else on either track you've mentioned, you lose the degree of visibility you're placing so much value on.
